george’s world renowned kayajingo salad dressing


Make a salad out of just about anything with this easily prepared dressing.

You will need: 3 tbsps of olive oil, 1 1/2 tbsps of balsamic vinegar, 1 generous splash of soy sauce, 1 tsp of lemon juice, 1 large forkful(about 2 tsps) of 100% natural peanut butter, 1 tsp of honey or sugar, 1 clove of garlic.

Peel and crush or finely chop the garlic. Place in a small jug or glass, and add the honey or sugar. Place the fork, with the peanut butter on it, in the jug. Add the soy sauce, lemon juice, olive oil and vinegar, preferably in that order. Mash up the peanut butter with the fork and beat till you have the desired consistency. That’s it!

The proportions are approximate, so adjust to your taste. Also, the amount of dressing you put on a salad is a matter of personal preference. Some people like their salads very wet, others prefer just a hint of dressing, so as not to drown the taste of the salad contents themselves. This dressing keeps perfectly well, so you can make up a batch that will last for several salads. I favour making a fresh dressing each time. It only takes a minute.

Instead of peanut butter you can use wholegrain mustard. This depends to some extent on the ingredients of your salad. For example, with a tomato salad, I prefer mustard. If you do, use about half as much mustard as you would peanut butter. However in my household, peanut butter is the firm favourite. Bean salads, potato salads, pasta salads, and of course any kind of green salad will appreciate being dressed in this way.
